I met another pro today whos a card counter. He counts over machine shuffling algorithms over his count. He was an advanced math professor and scientist and researcher in probability.
Anyway normal people cant keep up with that shuffling every game.

I dont think they are even counting cards. They are counting game by game. Thats just opening your eyes and looking at the shown cards and actually playing the game.
